What's my favourite food to make?

One time I asked a kid (a boy, maybe 5 years old): “what’s your favourite colour?” and he responded, “why does everyone always ask me that?”. I thought it was hilarious.

The chef equivalent is “what’s your favourite food to make?”. It’s an easy go-to question but it’s also a tough question because one of the things I love about food and cooking is its variety. It feels like a never ending path of constant discovery, and the more you learn, the more you understand how to incorporate and balance new flavours, creating more complex, more interesting food. I am convinced that I could cook all day, every day, forever, and I wouldn’t even make a dent in the food universe.

BUT, if I had to answer the question, I would say my favourite food to make is: dough. For example, pasta, bread, perogis, dumplings, noodles, the list is endless. Creating something delicious out of the most simple ingredients: just flour, water, egg, is beautiful to me. The more you work with dough the more it becomes innate, natural, comfortable. It’s also cheap, and a great way to connect with real food (instead of buying bread, I dare you to try making it once!). In honour of my love for dough, I am giving you my two favourite cinnamon bun recipes PLUS my perfect (classic) Cinnamon buns so you can fall in love with dough too.

Ps. no one ever asks me my favourite colour, just like no one ever asks that boy his favourite dish to make. But if they did, I would tell them forrest green!
